New to Smoking

Hi good people,

I have recently relocated to Sunny Florida from England, and thought I had found eutopia when I was introduced in to Deep fried Turkeys.....man I love DFT..... so to expand my skills into the outdoor cooking life i have watched the food channels and discovered Smoking, Well I went out and bought a Smoker from the depot ( Propane) and started to try it out, I seasoned it as per instructions, tried to some some chicken and Sausage and did not do a bad job nice and juciy but no flavor, tried some pork and jeez it has been the worst thing i have ever cooked ...... I have fairly good cooking skills and i am now in recoil on how bad a job I have done and feeling like i have no confidence in smoking, can some please help out with a basic beginners step by step fool proof recipe and instructions, please......

looking forward to learning and developing smoking skills from a very experianced collection of forum members

Welcome to SMF glad you joined us. Congrats on the smoker purchase it won't be long and you'll be producing some fine food with it. I would suggest signing up for Jeff's 5 Day Ecourse it has some great info and it's free here's a link

Welcome to SMF - be sure to take the ecourse for sure. Then spend a few hours reading on the methods used here - at the top of the page is a search bar - use that to find your smoker and read about the modifications and how folks are using it
 
Welcome to SMF, you have come to the right place to learn how to produce some of the most delicious food you ever ate!  I agree, start with the free e-course, Jeff, the sight owner and master cook has done an excellent job on it, read it all even if you think some parts do not apply to you they will come in handy sooner or later.  I also suggest that you go to the WIKI page, select the A's and make yourself a copy of the Acronyms, this will keep you from wandering what they are talking about.  Then just read, read, read and read some more.  I find the wiki's is a great place because it answers so many questions and gives you so many ideas on Smoke Cooking. Ken, the only dumb question here, is the one you do not ask!  So jump in and ask questions, read the post and before long you will be smoking thing fit for the Queen.   Glad to have you my friend.

First off welcome Ken to SMF. You'll like it here cause there are alot of really good folks that would just love to help you with anything to do with smoking. Now we like having new folks here to give a new prospective on some of the ways we do things around here. Now if you are really new then I would suggest that you sign up fir the 5-day E-course it free and it will give you the basics on smoking and a few recipes too. Here's a link to it:

Now the next thing you have to do is run out and get something to smoke. Ken - welcome to SMF!  Glad you could join us. I too was a mess when I first joined and realized that what I thought was good food was actually pretty bad. I spent hours and hours in this forum absorbing all I could and then set out to improve.  Got a neighbor willing to be my test subject and we both started gaining weight as I worked on my rubs, techniques, and finally got fairly good at it, but it took practice and time.  I am still learning and in fact having to re-learn with a recent move.

Hi Ken  Here's what I can offer.  One secret to pork success (and chicken and turkey) is to brine it overnight.  1 cup salt  and 1/2 cup brown suger per gallon of water.  Or better yet use stock instead of water.  You can also add herbs and other flavorings to the brine.  This will keep the meat nice and moist while smoking.  Second thing is to invest in a wireless remote temperature gauge.  I have one put out by Weber and you can put it in your pocket and keep and eye on things from anywhere in the house. One last thing.  Make sure you are well stocked on beer for smoking day. Smoking is thirsty work!
