Can't believe I haven't started smoking before now.   But better late then never.  The best bbq I have had has always come from a pit (raised in the deep South) or here in Texas where I reside now.  Cluelessly, always thought one had to slave over a pit to have good q. Fortunately, someone I work with mentioned how easy it was to smoke on an electric smoker (hadn't even heard of those).  So last fall I bought a MES 30" 20070411 and AMNPS.  First smoke was a pork butt and it went great.  Started branching out to other pork products, turkey and brisket.  The tips on this forum helped a lot but my learning curve still has a way to go.  Unfortunately, the original MES I had broke (controller went out) and Masterbuilt sent me a new one but mentioned it might not be the same model.  Well, they were right -- received a 20077515, which I do not like as much as the first one.  Still trying to work it out but am hooked on smoking now.

BlueWhisper, will have to try the salmon.  Assume you cold smoke it?
