New to smoking need sum help

  1. OK guys here does smoker for Christmas because I want to make my own snack sticks and summer sausage this year . I got a masterbuilt 40 inch propane smoker. Which is plenty big for anything I will probably ever do is what I need to know is fat ratio's cooking times I know can vary internal temperatures for snack sticks and summer sausage as it will be venison . I'm going to be doing some regular and some jalapeño and cheddar any help from you guys will be greatly appreciated I have made my own brought before those turned out great so I'm not 100% a newbie I guess just haven't been on the smoking side yet thanks guys let me know.
