Good Day all, 

I have just started my first smoke today, ive been reading a lot of messages here, and I will probably go out and either get me the MES CSK or the ANMPS, but thats not why im writing.

Im doing my first smoke as we speak. I did a inexpensive smoke just to learn my smoker and understand its concepts. I am making a smoked fatty.  With that said i had a few a question regarding the whole smoking process i couldn't find any where in the forums.

Do you generally clean out the ash tray during the smoke or let it go the whole smoke?

The smoke looks good. Since you are using the stock chip tray you will need to periodically look down the loader tube to make sure the chips are burning completely and not leaving a bunch of ash. If you are getting too much ash you will need to empty it but a fatty is a quick smoke so you should be fine. Just make sure you are waiting until the chips are burned all the way before adding more.

Coming form you all here makes me feel like doing it again.

I messed up somewhere in the middle and got a lot of white smoke but i think it was because I added to many chips before the cycle had burned itself out. Now I know for next time.

This looks really good for a first or any smoking effort! Here's my vote for the AMNPS. In the beginning I used wood chips and tended to think more chips meant better smoke flavor. I'd add them every time I stopped seeing smoke coming out of the top vent of my MES 30--about every 30 minutes. Because of this just about everything was oversmoked with that harsh aftertaste. After I switched to the AMNPS and wood pellets I think I became a real smoker producing great Q. The smoke's supposed to infuse and enhance the flavor of what's being smoked, not overpower it. My wife started to really like my BBQ after I started using the AMNPS.
 
Well I am trying my second one.. but i screwed it up before i even got the bacon on it.  I falltend it out.. than realized i didnt have Wax paper (wife used it all) so i took some foil, sprayed it with pam and gave that a shot.. but during the roll it fell apart. So this is now my attempt at an inside out fatty.
