Hey y'all

 Pooyie here. Live in Houston, Texas been here all my life. I use a MES 40" and have had great success with it so far. Done Brisket and ribs. Cooked several racks of ribs at once but my newest adventure will be to try two 8 # briskets at the same time for an upcoming party.

Good morning Pooyie, welcome from East Texas, you will do just fine if you can cook one brisket you can cook two, piece of cake.
