Hello fellow meat smokers....

I am not a new meat smoker, nor am I an experienced one.... my wife does NOT like smoked meat, so my experience has been somewhat limited.... while I love it, I must also appease her wishes....

I own and use, a Bradley smoker, but not the newer 'digital' model.... I smoke a lot of fish (Eagle Lake Trout) in it, and other items from time to time.

I own but do not use, a Treager smoker.  I had converted it from standard to digital controls, and it just doesn't perform properly.... I suspect, the wiring is not correct, as I can't get it to cook at less than 350F..... not good for slow, low temp smoking.... it is currently sitting outside waiting to be fixed or sold....

I also purchased a new Smoke Hollow unit last summer, that I am learning to use, and enjoy.  With the current winter weather, I don't use it much other than to BBQ a nights meal from time to time.  I do use it frequently, as we BBQ probably 4 or 5 nights a week.  But, no smoking at this time of year....

I stumbled across Jeff's website about a year ago, and have used it frequently, including downloading many of his recipes and I refer to it frequently.

I'm brand new to the forums, and have never actually participated in any forum befor..... so.... here I come....!!!

I live in northern California, in Mendocino County.

Well, I guess I didn't do this right the first time, so I'll try again.  I'll attempt to post a pic of my favorite trout... a 4lb 2oz Lahontan Rainbow Trout (Eagle Lake Trout) caught in Nov. 2007 at Eagle Lake, in Lassen County, northeastern California.

Nice Trout Mercy. Like you, I never did any other online forums before this one, but I love it b/c everyone is so helpful and friendly so feel free to post comments, questions, and pictures if you have them. Good luck and take care.
 
Hay, I live in Fort Bragg.  I am planning on buying a Bradley 4 rack analog and was wondering if you knew of a place in Ukiah (or Willits) that sells them so I can avoid the shipping costs.
