New to smoking in MS

    Hello all.  Family of 4 here in central MS.  Just purchased a Masterbuilt Propane Smoker.  We tried our 1st beek brisket last night.  Turned out better than we anticipated, but could have been better.  Of course, all this was before I found 

    Want to do a ~3lb pork sirloin roast tonight.  But have concerns over thermos, heating, and times.  Where can I find that info.  It has a thermo on the door, but I read the tend to be to be very inacurate.  Should I get 2?  Double probe?  Does Walmart have decent ones for starters? 

    I signed up for the ecourse, and hope to get a start on that soon.  And can't wait to learn and try more.

    Welcome to SMF We are glad you decided to stop in and say hello.

    I would give you an answer to your smoker question but I am strickly a wood and charcoal guy so I can't help you there.  We tend to cook meat by internal temp so you definetly need a good thermometer.  I do not have any personal preferences but if you do a quick search on the forum you will find many opinions and suggestions.  I would definetly go wireless.

  4. Welcome. I am a newer guy and only use charcoal. As for wal-mart having probes. Mine had 1 but I haven't tried it yet so I can't give you a review.

    Welcome aboard!  Tackling a brisket right off the bat was braver than  Now that you've found SMF, you've seen there is a ton of great information and folks here that definitely help us rookies out and shorten the learning curve greatly!  

    A lot of folks use probes from Wally World or from where ever.  The key is to test them, no matter if it cost $20 or $100, for accuracy with boiling water or ice water...even some of the more expensive units have issues.  If you have a Lowes store nearby I know I picked up a couple of the Taylor Weekend Warriors for the cost of what you'd pay for one from Wally World.  Lowes also (at least here) has the next higher Taylor model with a little alarm pager on clearance for $19.95 (I haven't ever used the pager device though).  

    After using both Taylor models for a few weekends I decided I wanted a device with a remote unit which landed me now with a couple of the Maverick ET-73s that can be found in the $40 range.  Comes with two probes, 1 intended for the meat and 1 intended to monitor chamber temps (but can be used for meat also), has low and high temp alarms for both probes which is great for catching a nap during those all night smokes.

    IMHO, you definitely need to get a good digital probe to monitor internal meat temps and you'll want to get one to monitor your chamber temps as you've already read most door gauges are not very accurate.  If you can, remove yours and calibrate it...boiling water is 212*.

     Calibrated thermos are a must in my opinion to achive consistantly good smoked food.

     Nice to have a new member from the magnolia state.

     Or ifn ya live in south miss. it's the gold coast .

    Welcome  huskerfoos, to SMF. I purchased the ET-73 Maverick recently and (IMO) it was definetly worth the money. If this one holds out, I will be purchasing acouple more.I cant help with the propane part. I use lump and wood, Good luck and Happy smoking     [​IMG]

    First off Welcome JJ to SMF. you'll like it here for there are alot of really good folks here that would just love to help you with just about anything to do with smoking. Now there are alot of proven recipes for some amazing things here too. So if you need sign up for the E-Course it's free and it will give you the basics of smoking and some good methods to use also. So the next big thing for you to do is go out and get you something to smoke and if you happen to have any questions just post it here and we will be happy to answer them for you.

    Thanks for the wlecomes everyone.  I went out to Walmart and bought an el cheapo Sunbeam thermo.  Only choice I had at the moment.  Anyways, I am gonna attempt the pork loin roast tomorrow.

    Digital is the only way to go. I am a Natural Charcoal and wood Smoker. And I really love to cook over an open fire. So I check for meat internal temp.Again Welcome.

    Walmart does have a few decent digital probes.  Thats what i am using currently.  Just watch the displays in direct sunlight and they should work for a while
