Greetings from the central valley of California. I am a retired Navy Senior Chief and we recently got our first smoker. We got a MES 30 that I almost immediately did the mailbox mod on. So far I've done a butt, spare ribs, chicken, salmon filet, 4 tri tips, and 2 briskets. I used some rubs I found in the local stores here and I purchased Jeff's rub/sauce recipes. I can't believe we waited so long to get a smoker! I will never be without one again!
