Good afternoon gents... and ladies. The name is Joe and i hail from Maryland. Living in an older house i spend quite a bit of time at Lowes, I just can't seen to stay away from the outdoor and bbq section, my girlfriend knows this and makes fun of me for it every time we go. About a week ago she surprised me with an OK Joe Highland off set smoker. Now i know thats its not top of the line by far but i guy has to start somewhere, lets just say she saved me a lot of money on a first smoker because left to my own devices who knows what i would come home with

. Ive used smoker boxes in my propane grill before but never an actually smoker. I've been doing some research on this particular model and as of right now I'm planning to heavily mod this thing, starting with a fire box, baffle, gaskets to seal the cook chamber and fire box, maybe some latches for the lid and most likely some tuning plates or a convection plate. Oh... and i have a strong feeling I'm going to end up adding a shelf to the cook chamber.
Any help/advice in these mattes would be greatly appreciated and i am looking to get this new toy fired up soon. Look forward to hearing some input.
