Hey everyone,

I'm Ryan, 28, Born and raised in Reno, NV. Been in the US Navy for the last 8 years or so, currently residing in Norfolk, VA.

I grew up running around the backyard while my dad was grilling on the weekends, and it has always been  something I thoroughly enjoy. 

Well, after a talking with some buddies of mine on the boat, I decided I wanted to jump into smoking meats. I did some research (mostly on these forums), and picked up a 40" MES gen 2.5 and the AMNPS for it should arrive tomorrow. It seems like a forgiving setup for someone new to the art, but we shall see! I'm chomping at the bit for my first attempt.

I'm looking forward to getting the 5 day E-course and learning as much as I can from everyone.

Thanks to everyone already who helped me pick up my rig to start having some fun and making some great meals.

Hi there and welcome!

It looks like you are well on your way to diving into this smoking thing.  Be sure to look into getting a dual probe smoking thermometer like a Maverick.  The MES probes are notorious for for being off.  In any case it is very useful to have the extra 2 or more probes to use on different cuts of meat you smoke at the same time or for finding the hot/cold spots that WILL exist and WILL shift around as you load the smoker differently.
