Going to give this toggle latch a try to see if it holds up. Noticed I spaced it off of the firebox to keep it away from the heat some but when installing it I managed to bend the U-bolt on it, so there is no telling when or if will break off now.

I'm about 90% done now.  I got it done enough to cook on for Labor Day.  All I really have left is to add shelves and paint.  We are going to season it tomorrow using a cooking oil spray, bacon, unknown flavor of wood, and high heat.

Got it seasoned today.  Coated the inside with some EVOO cooking spray and brought it up to temp with some hickory wood and threw 3 pounds of bacon.  The bacon had more wood flavor than anything I have ever tasted before.  This thing works great, is sealed good and holds temp pretty good and is pretty consistent from side to side.

First cook was a success.  We did 5 slabs of ribs, a pork butt, and a bacon explosion.  It took us a little bit to figure out where the intake and exhaust vents needed to be but we got it dialed in perfect.  There was only about a 10* temp difference between the right and left sides of the cook chamber.
