Live in Tampa Bay FL area. I have been wanting to try smokin for years and finally took the dive and ordered a Masterbuilt 30" or MES as the group calls it. I am also going to experiment with using the amazin pellet system after trying the wood chips. I know I need to season it and I have seen the video but as a Newbie any recommendations for doing chicken wings and lobster tails this weekend for Father's Day would be appreciated. Thanks

Welcome to the group and to the addiction..er.. hobby of smoking meat!

You may want to check out the newsletter from smoking meat forums. it comes out on Thursday usually and gives you an email recipe for using your smoker. You may want to consider buying Jeff's rub and sauce recipes. they support the message boards and site and are good starting points to use in your BBQing.

Once you do a seasoning and a smoke or two something you may want to try is Country Style RIbs. they are forgiving to smoke and you can smoke them like pork spares and they turn out like meat candy. do a search for CSR's or 3-2-1 method and you will find a ton of info. bonus they are very cheap by the lb in most places. (i pay between $1-$1.99# for them).

Hope this Helps and Welcome to SMF!
