new to smokin'

  1. Hi, I,m Dave, an old guy that lives in Illinois close to the Wisconsin border. I have just purchased my first smoker " Brinkmann Smoke 'n Grill". I haven't tried it yet but looking forward to it tomorrow. I have one question. I keep reading that oversmoking is very bad. How do you know when to quit adding the wood and just let the charcoal do its thing? Thanks

    Dave welcome to SMF glad you joined us. Congrats on the new smoker. You'll find lots of good info and some great recipes here. Personally I find it hard to "over smoke" meat if you follow two things.

    1.  All you want is Thin Blue Smoke (TBS) which is just a light blue smoke coming out of the stack or no smoke at all and just the smell of the wood burning. White billowing smoke is not what you want and can produce creosote and tastes terrible.

    2.   Different woods give different flavors and amounts of it and what is a great flavor is good for one person is not good for another. Apple wood gives a very light flavor while mesquite is a very heavy flavor. Maybe start with Pecan or Oak if you can find them they are kind of considered medium flavors.
