Im jamon corbin from bowling green ky  I have a 30in cajun injector electric smoker and i think the more i read the more i wonder what i should do for my first time smoking ever !!   I had friend tell me of this site and great site

For a first smoke, go small, simple and easy. Chicken quarters are one of the first things that flashed into my mind. They're small enough to not take all day and half the night, and just large enough to take 3-4 hours, so you can kick back and enjoy the smoke time. Smoke @ 225* to internal temp of 155* in the thigh/leg and 150* in the breasts, then, toss onto a hot grill to sear and crisp up the skin...remove @ 165* in the breast and 170* in the thigh for a juicy good eating bird. Oh, be sure to buy a digital probe thermometer...you'll need it for future smokes as well.

Apply a light coat of oil on all surfaces and season with a simple blend of rosemary, thyme, cracked black pepper, salt, garlic, and a pinch of sage. Just a few basic poultry seasonings will go a long way towards enhancing the flavor.

Smoke with milder wood(s) such as apple, pecan, cherry (these are good in duo/trio combinations, as well). Use stronger smoke woods (mesquite, hickory) sparingly with poultry.

So, start simple and easy, and work your way up from there. It gives you things to look forward to for future smokes and allows you to build your experience levels and confidence in your skills along the way.

Have fun with your new hobby/addiction...well, you're not addicted yet, but you will be...and, the best part is that it's legal, and there's no cure, only that "next fix"...LOL!!!
