Hello to everyone,

A little about myself to begin with.

I currently work for the Marine Corps as an Explosive Ordnance Technician, on a ship in the middle of the ocean, about as far away from real BBQ as you can get. Should be back stateside ready to cook in another 4 months or so.

I have only recently (maybe 2 years) started to get into cooking and smoking as a whole. It started when I bought the Bayou Classic Ceramic smoker at Lowe's and decided I wanted to learn how to use it. I have also purchased the Bayou Classic turkey fryer, and was given a Char-Broil oil-less turkey fryer as a gift. Both of which I have learned to use extensively.

This is my first forum I have ever been apart of on the internets, so I look forward to it, as I have actually followed the forum for quite some time now. In the near future I would like to purchase some sort of horizontal, stick burning smoker to replace my ceramic one.

-Forgot to mention... I grew up in central Texas and was surprised when I moved to North Carolina that people did not know what brisket was.
