Hi all, my name is Keith, I live north of Houston TX. My wife bought me a Gas Smoker for my b-day and I am just getting started in the smoking game. I have a Great Outdoors 3405DW.

Keith, glad you joined us.  If you put your model in the search bar you may find some mods you can do to it to make it run more efficiently. 
 
Welcome to the forums, Keith!  This is the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks who really enjoy helping one another.  Looking forward to your input here, and just ask when you need anything...someone here will surely have the answer.

We love to see pictures of what you are cooking (or what we call q-views here at SMF).  To "upload the q-views" just follow the directions here and it will be easier. If you are using a cell phone, an IPad or a kindle, go to the main SMF page and click the Mobile button. Will make the uploads a bit faster too.

If you didn't read the "Terms of Service" notes.....please do.  There are a few things that everyone should know about those pesky little rules before plunging into the forums and some guidelines of how to interact within the forums. Off site links are not allowed here at SMF per Jeff. Not that you have done anything wrong....just a little bit of FYI for new members!

Jumped right in and did a Boston Butt last night, 4 hrs of smoke, pulled and wrapped 3 fold seal on the foil, 20 hour total cook time. 

Next time 15-17 hour cook time. Due to day time heat it was hard to keep the cook temp at 225, 10 PM bed time last check then, pulled off smoker at 7:30 AM. Put in oven at 150, keep warm.

Pulled tips from SMF and Pork Butt came out great for first run at it.

Next is ribs using 2-2-1 rule.
