While not a newbie at smoking meat, I admit I am here to learn and to sop up all those years of know-how from you guys.  I'm an Oklahoman transplanted to Texas (by choice I suppose).  And I've been a lifetime lover of smoked meat.  My first big attempt was in a regular flow trailer mounted rig.  We were at deer camp and my uncle's rig had me chompin at the bit to try it out.  

My first smoke was a 100# whole pig.  There were about 10 guys there with us in camp and the meat was pretty much gone the day after it was done, so I guess I did a fair job of it.  Since then, I've honed my chops on that cooker every year.  But alas, I do not have one of my own.  

I do have a stick burner for the backyard, but I'd love to have my own rig...  I also invested recently in a propane smoker from Lowes.  After some initial fails, I think I've got it figured out and will be posting some pics soon.  I plan to smoke a roast beef in it tomorrow, so I'll try to remember to take pics along the way.

 to SMF!!! We're happy you found us! Sounds like you have some good experience to share! There are a lot of great people on here who love to share also! I use propane also and it took me a few tries and a few mods to figure it out but it is working great for me now.

Looking forward to seeing some of your work!  Just so you know since you are new if you post any pics our software will probably hold the post until a moderator can approve it. Just be patient and don't double post it because you don't see it show up right away, someone will get to it! We do this to keep the spammers out and so no one posts anything inappropriate until we get to know them. This only lasts until you make about 20 posts
 
No problem about the hold on pics.  I completely understand.  I see no spam on here and that just makes the whole experience better for all of us.  Here's looking forward to a lot of good smoked meat!
