So I grew up on an Indian rez in southern Oregon and we used to smoke fish or goats in an old hollowed out freezer with a fire at the bottom and I loved the smoke flavor and preservation.  Now that I'm older I have a friend with a huge smoker he made out of an old 5000 gallon propane tank and he makes some epic foods for our employee feasts.  I'm not that quite ambitious and I don't have that much money so I bought a cheap char-grill offset smoket and I'm itching to get started again!
