What's up everyone,

I'm from the Illinois/Wisconsin border. I've been BBQ cooking for years but fairly new to smoking. I have a Webber kettle 22.5 and 18.5 that I mostly use for indirect cooks. I also have a WSM 14.5 that I love to smoke with because its' user friendly. I also got a horizontal Brinkmann Trailmaster this past Christmas which I'm have trouble using properly. I done a tone of mods to it; RTV around the firebox, gaskets on both cook chamber and fire box, charcoal basket, flue at grate level, latches for cook chamber. I just bought baffle and tuning plate because the cookie sheet mod failed. I also have a Kenmore propane grill that I barley use anymore.

Welcome from SC. It's good to have you here. Good luck with your offset. When you get it rocking and a good wood fire, it will give you a really good flavor.
