I'm new to the MES. I just Pre-seasoned my MES30 per the directions. The ashes were on the burner coils. Shouldn't they be on the wood chip tray? Did I put in the wood chip tray in the wrong spot? Should it be on top of the burner coils so the chips fall right onto it when I twist the chip loader?

The tray should look like this.

The long piece of metal goes under the element, the short piece goes over it

Got it! Thank you-perfect timing as I am ready to load the brisket now for overnight smoking.

Hello smokers!

I just pulled out three slabs of brisket from my new MES30 after 12 hours at 250 degrees and with IT at 189. I wrapped them in foil to cool. I'm not sure if tender enough. One felt tender with the "fork test". I'm not sure about the other two. Attached are pictures.

I am thinking of putting them wrapped in foil in a standard oven for a couple more hours since I don't need them until much later. Should I do it?
