New to making jerky

Hello everybody.  I'm new to the board and to making jerky.  I have been making jerky in my electric smoker for about 3 months and bought a dehydrator yesterday.  I smoked sliced goose breast and ground elk for 2 hours then put them in the dehydrator for about 3 hours.  Both turned out great and I will post pics later.

I work in the disaster restoration industry and used a thermo hygrometer to monitor the dehydration.  I was wondering if anyone else did this too?  I was also thinking of using my moisture meter to test the jerky dryness.  Has anyone done this and know if it works?
 
I do do the bend test.

  • You want it to crack with the grain but not against the grain.
