Hello Everyone.

I joined the forum a while ago and have been reading a lot, but I must confess I am only now just posting to the "Roll Call." I have been using a Traeger for over a year now;  the food is great far better than using propane, however the fluctuating temps and burn outs on long slow cooks drive me crazier than I will admit that I am. My family says what I have been cooking is Awesome, but I feel I have only learned the basics of a long list of secrets to mastering the art. I just purchased a MES (30) Sportsman Elite and I'm dying to christen it for the first of many smoking voyages.

Hello Michael and welcome to the fun.  Many good folk here with a load of experience that they are more than willing to share.  If you have specific questions just start a thread and someone with experience will be along soon to offer advice.  All info you can provide us with will help us answer any questions you may have.  Spend some time doing some research on the forums, tons of advice and recipes already available there.  I'm sure the MES owners will be along soon to offer advice.  We look forward to your contributions.  Have fun.  Good luck.  Keep Smokin!

Welcome to the forums, Michael!  Glad you've joined our group.  You'll find that there are lots of friendly and knowledgeable folks here who genuinely enjoy sharing ideas on grilling, smoking, curing, etc.  Looking forward to your input, and just ask when you need anything...someone here will surely have the answer.
