New to Forum from Ellis County Texas South of Dallas County

  1. Hi All, I have had success in the past with indirect smoking but without a smoker that had a separate firebox. Just purchased the Wrangler Smoker from Academy for July 4th cookout.  I like the challenge of that method over the egg / komodo cooker style as a consideration.  Now I'm looking to improve on my skills in smoking a variety of meats for consistency and excellence in flavor and smoke.

    I live South of the Dallas / Ft. Worth Metroplex and another area of experience I'm looking to improve is on what the differences are in the various wood types to cook with.  One of my local BBQ joints uses Hickory exclusively for its slow and consistent burn rate.  I've used oak and mesquite in the past but never anything from a fruit flavor.  BBQ Pitmasters resently touted that fruit woods were the best.  Only thing available to me around here that I've seen so far is Apple at twice the cost of anything else so wasn't sure if it was really worth it or not.

    Anyway, looking to benefit from your experience on many levels to facilitate a rapid improvement in my efforts.

    If you didn't read the Terms of Service notes.....please do.  There are a few things that everyone should know about those pesky little rules before plunging into the forums.     Howdee Steve, being from South Louisiana my smoke of preference is Pecan. When I do a hard smoke hickory or mesquite are great, Mesquite is #1 from my time living in West Texas. Usually I use the hard smokes for brisket and butts. And the lighter smokes for everything else. I like apple on my bacon, and Corn cob has a beautiful color. But to me its all about pecan.

    Just a suggestion, keep notes so you'll remember what did and didn't tickle your fancy. Its a shame when for some silly reason you miss some time smoking and then can't remember where you were, or smoke that perfect smoke and can't remember what you did to get it. Like I said, just a suggestion.

    Howdy Neighbor.. I live up in arlington... welcome to the forum!

    Im a mesquite guy myself.. for one its everywhere.. and i like the bold smoke flavor. And alot of times I can find it free.. but like you apply and cherry are about the onky thing to buy at the box stores other than the normal woods. If I ever run across someone selling bulk wood..specially in the outer countys like your in ill take a mental note and let ya know! Welocme again....

    A lot of people use oak for heat the other wood for flavor.
