Just purchased the digital 30 master built pro. Supposed to arrive 8/29/2016. Planning on trying my hand at smoking brisket to start out with. Any suggestions?

Now, my fist suggestion is to NEVER trust the factory thermometers, they are notorious for being off. A good external thermometer will be a must for consistency.
