I did my first smoke this afternoon, one rack of ribs and 4 oz. of hickory wood which apparently is too much wood for one rack of ribs. The ribs were moist and flavorful but to smokey for my taste, I guess it is a learning curve and I am at the bottom. Anyway I set the smoker at 225 and smoked for 4.5 hours, the rib rack was huge, probably the largest pork ribs I have ever seen very fatty and a lot of meat. We were trying out a new rub and that's the reason I only did one rack, perhaps two would have had a different outcome. I have been using a Traeger Lil' Texan for the last 7 years and really didn't have to think about the volume of wood, any thoughts and suggestions would be appreciated.
