i bought me a masterbuilt smoker just for smoking sausage, made my first batch of summer sausage, thats on the smoker right now, at what temp does a electric smoker produce smoke?
i like this smoker to start out at very low temps, to dry out the sausage at 100 degrees and add as i need it too, but now i am up to 130 degrees, and still no smoke...HELP

The heating element will cycle on and off. At low temperature you're not going to get much smoke. I use an amazen tray and burn pellets. I also use it for cold smoking cheese.
 
when i hang my summer sausage, how can i keep it from turning the bottoms darker, looks like a little burnt, but its not.
I just lay mine on the racks. They seem to cook more evenly that way.
