Howdy all. Started using my new smoke hollow pro series double burner propane smoker recently and been smoking every thing in sight. Lol. We live in east Texas and the weather here lately has been great for quality time on the back porch. Trying a few different ideas and I haven't thrown anything out yet.
I'm trying to smoke my first ever prime rib roast for Christmas dinner. Gonna follow cherry wood method and see. 6 and 1/2 lbs. and not sure if inject and rub or just rub only. Is 30 min per lb with heat maintained at 225-250 a good bench mark. I will also use internal temp of 130-135 as final guide wanting an over all medium result.
Just finished smokin some raw polish wedding sausage from Falls City Tx. Using only mesquite and it was awesome.
