Hello for about a year now I've been smoking on a ecb with pretty good
results. Now how ever ive just purchased and cleaned up a old school okie joe horizontal pit the question is before I get busy on new mods what should I smoke this weekend? im wanting to try a fatty but I don't know if I should try it on the new smoker or the hood old faithful ECB :grilling_smilie:
 
Can't go wrong with a pork butt.  Congrats on the new smoker!

I also got a used New Braunfels/Oklahoma Joe a week or so ago and had the same dilemma.  I started the ribs in my ECB while I started cleaning the new girl, then built a fire in her see how she performed.  When it was time to foil the ribs they went on the new smoker because she was doing so good.

Build a good fire in the new smoker and see how it does before you do a cook

Some folks like water and some don't.  I always did in the ECB until I came here and read about the sand in the water pan trick which worked great!  I haven't used a water pan in the new horizontal rig and doubt if I ever will
