Hey everyone. I've been reading the threads and it seems like there is a very great group of people here who all share the love of great food!

I'm from So Cal and I just bought a MES 30 bluetooth model and seasoned it last night. I'm thinking of doing a tri tip right off the bat before my AMNPS arrives. I guess the question i have is both temperature/time and weather or not too add water or Burgandy wine to the water tray. Thanks in advance

As for your tri tip, go to the newsletter archives or the recipe section and look there. You will find all the help you need.

Welcome to the group Hawkmann!  I like to reverse sear a tri tip.  Smoke it to an IT of 125-130 and then sear it over direct heat to get a nice crust on the outside!

  That may be difficult with the MES.  Burgundy in the water pan sounds tasty!

Tri tip is the perfect thing to smoke for your first run.

We like them rare, 120-125 IT.
