Just wanted to give the what's up to you all coming at you from Buffalo, NY.
I never really had a big interest in smoking meat in the past. I'd just pop whatever on the grill until it was done and that was that. Then our gas grill took a shit this year and I needed to find a replacement. In looking for something I started coming across all of these smoking forums looking for reviews. Thought to myself, well hell I've been wasting time producing half assed meat all this time.
So I got a CharBroil Classic 4 burner gas grill. The lady didn't want a dedicated charcoal grill so I settled on this for steaks and for her to use. I got for myself a Weber 22.5 Gold Kettle and ordered a Smokenator 1000 with the HoverGrill addition. Did a few dry burns with the system until I was comfortable with it and just last Sunday did up 2 racks of ribs. They came out well enough for a first cook. I chose to not do the 3-2-1 instead just straight rub'd and smoked for 6 hours rotating the two half way through keeping them bone down the entire time. No sauce. This was the test run and they came out well enough. I was not completely satisfied with the results but everyone that ate them loved them. Next time I'll try a method other than "dry".
So that's that. I'm hooked. Picking up a Maverick 733 tomorrow and I'm already looking at all sorts of accessories and even new smokers. Any additional smoker purchase will have to wait. I still need to fully understand the one I have before jumping into a new one but I've already settled on the Pit Barrel Cooker as the next cooker purchase. I understand that the PBC does not cook low and slow rather averaging a cook temp of 325-350 but 8 racks of ribs in 3 hours cooked at the price point they're selling it at with the included shipping is just too tempting.
So that's it. There sure is a lot I've got to learn and this seems like a real great place to hang out while I do. So thanks to everyone ahead of time. I hope to learn all that I can from everyone here.
