New smoker long time griller

    Hey everyone I'm incridably new to smoking so I have a few questions. The first how to start? My wife wants a smoker that looks well appealing I was leaning to the Masterbuilt ES but I see on these forums active users seem to have issues with it all the time. Will it achieve that smoky taste will I have to babysit it, and will it get that great tasting bark on the meat.

    Or do I go with the smoky mountain lot of draw backs a lot to set up which makes me wonder if I'll use it as much. Open coals what if someone hing goes wrong while I'm asleep and the house is burning down because some animal knocked it over oh and it's not exactly appealing to look at. But I hear it's the best for taste cook bark and all the things you think of when you think smoker.

    Hey pankake,  welcome to the group!

    I chose the Weber Smokey Mountain because it burns charcoal and wood chunks.  I've never cooked with electrics or gas, so I went with what I know.  Grilled my whole life on Weber kettle grills, so WSM was an easy choice.  I've been a happy smoker for a couple of years now!

    Welcome from SC, Pankake. Glad to have you on this great site. I think the advice from Mike is right on. The WSM is a great unit to start with. It is very user friendly and easy to use. It heats well and holds heat fairly well. You don't want to open it any more than absolutely necessary. When you remove the lid it exposes the entire top and a lot of heat can escape.
