I'm a new smoker and amateur griller. I have a Brinkmann Heavy Gauge Charcoal Drum.  I'm working to control the temperatures to get a nice 225F smoke. I'm not there yet. I've smoked some chicken and it turned out great. Port butt is probably next. I've modified my grill, sealed leaks and doors and fixed door hinges (they were loose). Next are temperature probe ports, a heat baffle and a smoke baffle (to limit oxygen). We'll see about a charcoal basket. I don't know if I need one yet.

If you didn't read the Terms of Service notes.....please do.  There are a few things that everyone should know about those pesky little rules before plunging into the forums. Thanks guys. You make me feel welcome. I've enjoyed the modifications made to the grills. I've got my grill sealed such that if you close the vents, the fire goes out. There isn't any smoke except for chimney! Looking for my first real low and slow cook!
