I'm Ray from Jonesborough, TN and this is my first attempt at smoking. One of my coworkers has a catering business on the side and has a huge trailer mounted smoker that he uses. After talking to him and seeing pictures of what he did, I wanted to give it a try at home. We bought our first 1/2 beef a while back, grass fed Texas Longhorn, that a truck driver at work raises locally and I wanted a good way to fix the brisket. By the way, I grilled 6 ribeyes last night and my wife kept carrying on about how it was the best steak she had ever had. I had been looking at smokers locally at Bass Pro and online at Amazon. Bass Pro had one on sale and when we went there, they had shipped them back because they weren't selling good. The girl there told me most people came in and bought the cheap one to try smoking and so that's what we did. We bought the Cookmaster propane smoker and as the wife said, if I like it and get good at it this one can go in the camper and we'll get a better one for the house. I'm in the process of smoking the brisket which is almost done so we'll see how I did. Looking forward to learning all I can from the forum. Thanks.
