New smoker from Spain

Hello there everybody

I´ve just discovered this forum, and It´s great.

I want to learn more about this technique, because we do not use it a lot in Spain. I don´t know anyone here who uses it.

I first saw it in Alabama, in my host family, smoking a Turkey for Thanksgiving......and I miss it (almost as much as I miss those good ol´folks)

I was searching information to get a smoker, and I´ve found this awesome forum.

My english is not too good, and I think I´ve introduced myself in the wrong section, I´m sorry for that.

I live in Spain, where we are not too used to smoking food, but I got to know this way of cooking as a kid when I had the luck of staying a whole year in Alabama.

And ever since, I´ve missed those people.....and that way of cooking.

I hope to learn a lot of this way of cooking of yours.

James....I live in Madison....right next to Redstone Arsenal and Huntsville.  The main Airport is about 5 miles from my house.

Rogersville and the river is wonderful!

Spain, compared to the US or Canada is really small. I live in the North, although I come from the southeast. ( a spanish redneck).

Here in the basque country, the level of cooking is quite high.......but the people here only smoke the cheese!!!! Because of the humidity.

And nobody has even heard about smoking a Turkey!!!! They don't know what they are missing.

And about the black hoof.....you're right. It is one of the best foods in the world. It comes from the iberian pig (the iberian race)
and although is not smoked is also delicious. One of those things you have to taste, like the manchego cheese.

I'm looking to find a company who produces cured iberian ham, so I can import from them directly.
Have you any idea where I should look for producers?
 
There are 4 different areas in which the iberian ham is made under D.O.
Dehesa de Extremadura
Los Pedroches (cordoba)
Guijuelo (salamanca)
Jamon de Huelva

I would recommend two:

Jamones BEHER in Guijuelo

Jamones IBESA in Los Pedroches.

There is also ham produced in other areas like Toledo, but it is not qualified as DO.

Welcome from NW Florida, as its been said there is a lot of great folk on here and they will lead you in the right direction. You can also use the search at the top and find just about anything.
