New Smoke in Wisconsin

    I am new to smoking - have been at it for about 6 months.  Bought the rub and sauce recipes and love them and everything I have smoked I did from Jeff's newsletters.  I use a Char Griller Smokin Pro model 1224 and really enjoy it.  Wondering if anyone has any advice for smoking during the winter months?  Feasible or do I just put it away until spring?  I don't want an electric smoker, I enjoy my time with the charcoal.

    Welcome, from southern Ohio, to the best forum on the internet if you are looking to learn how to BBQ/smoke/brine/cure/inject. Well you get the picture if you can do it to to something you put on a plate to eat then someone here has probably done it. Use the search bar at the top of the page and you will be led to the answer to most every question you can think of. If you don't find the answer there then just post it and someone will chime in with there opinion on the subject. As far as smoking in the winter I do it all year long! The main thing is you have to learn the diffrence the weather makes on your pit! Also you need to think about some way to monitor your pit from inside the house, think Maveric 732 or 733 remote, it will get old very quicly if you have to be outside for extended periods in realy cold weather! As long as your pit will reach temp. in cold weather, some use welding blankets to help, you should be good to go!

    About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing

    welcome to the forum. That smokin pro is a decent smoker but there are a few mods that will help you get better, especially in that cold wisconsin winter. That suggestion of a maverick 732 or equivalent is a must. Very accurate compared to the CG temp gauge and you can see how things are going from inside. To help the CG hold heat getgasket material for around the lid AND put and extension on the chimney to slow down the heat and smoke loss. The smokin pro really has an awful high velocity exhaust. Simple 3 inch flex ducting from Depot or Lowes works great. If you google char griller smokin pro modification you'll come up with a few good mods for that cooker. Try the search here too.
