New to smoking at home since inheriting and electric and side smoker from the inlaws.  Have had my attempts at brisket, chicken, and pork.  Needless to say I'm hooked.  Went out yesterday and bought some Persimmon and Hickory wood chunks for Easter cookout.  Look forward to reading all the recipes and open to any advice or tips anyone can provide.

Here's what I'm working with at home. Couldn't be happier with the results so far.  Except the brisket.  Keeps coming out a little dry.


 
Ahhhh  an ECB and an off set.  Started out with an ECB myself, turned out lots of great BBQ. Tell us the steps, time and temp you are doing on brisket, that way we will know what to suggest.
