new round of chicken bacon using breasts

  1. Well, trying to slice a chicken thigh in uniform pieces is a PITA, so i mixed up another batch of brine and did up a batch of breasts. I was out of dust so had to do a warm smoke in the mes30.[​IMG]really woulda prefered a cold smoke but oh well, do what ya gotta do. They still cook up dry but flavor is good.

    i agree, yardbird is hard to beat. especially the way pork messes with my gout. just wish i could find that happy medium to have a nice crispy piece of breast bacon that wasn't dried out. other than that, its good. i'll continue to experiment with it, but the next bring will be mostly thighs.
