Hey y'all.  I went to college in Memphis and graduated about a year and a half ago and work in Memphis now.  I have been eating great BBQ here for a while and figured I would try my hand at it.  I have done a few butts, racks of ribs, and this past weekend did a pork loin.  I have a horizontal offset smoker that was given to me by a friend who inherited it with the house he moved in to.  Needless to say it is not the greatest smoker, but for now it does the job (I plan to invest in a better one once I save up the funds).  Each time I smoke something I try and do some research and try a new rub.  I look forward to hearing other and more experienced smokers opinions/tips/advice.

Something I haven't tried yet, but want to, is to start smoking sides for my meals.  I always smoke the meat and have chips and dips and other easy sides but I would love to served a smoked side.

Welcome to the board! You can find smoked sides here, look around.

But just to be a devil's advocate, I suggest you have some sides that _aren't_ smoked, to have something cool and refreshing as a contrast to the smoked main items. OTOH smoked sides can be nice when the main item isn't smoked - like a smoked potato salad or beans to go with ordinary grilled hamburgers.

Sides? Appetizers? Desserts? If you can cook it in an oven it can probably be adapted to a smoker.

Unfoiled baked potatoes are easy and delicious. Clean, poke 4 times, rub with oil the sprinkle liberally with kosher salt. Smoke until they give a little when squeezed between your fingers. Just about any temp will work and they take a couple hours or more. Eat the skin and all. Trust me, you'll hear lots of OMGs.

Oh, and do the search bar for Dutch's Wicked Baked Beans.
