New MES owner

    I finally made the plunge and bought a MES 30 Sportsmen from Bass Pro. I searched a ton of websites online to find the best way to make wings. The first batch turned out great. 2 1/2 hours on 275. Flipped them about 1:30 in. I wanted to be sure they were done more than anything and I only have a cheap instant read thermometer, which I wasn't comfortable using on wings with the bone so close.

    I look forward to reading and learning from the vets.

    About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing

    Thank you. I'll probably be smoking a chicken this weekend. I'll add some pics then. I'll be doing some research on it tonight for best practices and seasoning for the bird

    Welcome, from southern Ohio, to the best forum on the internet if you are looking to learn how to BBQ/smoke/brine/cure/inject. Well you get the picture if you can do it to to something you put on a plate to eat then someone here has probably done it. Use the search bar at the top of the page and you will be led to the answer to most every question you can think of. If you don't find the answer there then just post it and someone will chime in with their opinion on the subject.

    Good morning and welcome to the forum, from a sunny, windy and Cold day in East Texas. Lots of great people with tons of information on just about  everything.

    Thanks. I just ordered my AMPS and some Q Mats. I'm addicted guys...I need professional help haha
