I finally made the plunge and bought a MES 30 Sportsmen from Bass Pro. I searched a ton of websites online to find the best way to make wings. The first batch turned out great. 2 1/2 hours on 275. Flipped them about 1:30 in. I wanted to be sure they were done more than anything and I only have a cheap instant read thermometer, which I wasn't comfortable using on wings with the bone so close. I look forward to reading and learning from the vets.
