First run of my new MES 30" SS.  No mods, no tricks, just a straight run to see how it behaved.  Dry rub St. Louis style ribs for 5 hours at 230-250.  Apple and alder smoke.  Came out pretty nice for a first shot.  I don't care what people say, that window is great!  Much easier than my old Brinkman Smoke-N-Pit. Indeed, the outdoor temp was 34F which would have been pretty near impossible with my SNP. Do miss seeing the pink ring a bit, but will get past it.
