New MES 30 setup and seasoning

I set up my MES 30  and put in my AMNPS & Maverick ET 732.  Here is what it looked like:



When the smoker reached 275, the Maverick read 282, 285.  That was actually better than I expected!

I placed the transmitter on a rib rack just to be safe.  I later saw that I could placed it on top of the digital system on the smoker, but it will cover up some of the readout.

Can the transmitter sit safely on top of the smoker?  Any other suggestions?

Thanks all.  I will be smoking a 17lb turkey Monday for my first smoke.   WISH ME LUCK!!  And yes, I will upload photos.

Looks like you are geared up and ready to go.

Just a thought if you don't own a small blow torch go buy one. You'll be glad you did,

I think turkeys my favorite smoke, then you get turkey sandwichs, turkey gumbo, turkey salad, turkey spaghetti, etc etc etc...if there is any left over!
 
Good luck with "Big Bird" Hehehe. Keep a log of your cooks for reference and improvement in your techniques.

Mine is the same design as yours, and I always lay it on the left side of the top. It gets a lot hotter on the right side of the top.
