Hey guys and gals! I'm a Texas native that loves BBQ! I'm 28 and have 7 years in the restaurant biz.4 years in pizza and 3 years in bbq. I used to manage sunny bryans bbq. got out of the restaurant biz and I'm now in the HVAC biz. Ran my own road side bbq biz for a couple of summers and worked for myself and loved it. I cooked and average of 400lbs of meat every weekend. I use to run on a 12 ft smoker trailer and a commercial 4 door freezer I turned into a smoker. Now I'm just getting back into smoking again and I'm currently using a Masterbuilt Sportsmen Elite 44'' cabinet smoker with the window that I've modified a bit and still need to some more mods on to get it up to par. planing on modding the smoke stack this weekend.
