in Lubbock, Texas.  Casually lurked for a while but since I am the proud new owner of an MES 40" I thought I'd sign up and see what all I can learn.  I also have a 12"x40" Uvalde grill with the trailer-hitch attachment so I can take it camping.  So far on the MES I've done a pork butt that turned out well and I hope to do a brisket soon if I can get a good sale price.  Is it true that it should fold in half in order to be a good one?
 
Welcome to the site.  Congratulations on getting your new smoker.

I trust my eyes when studying brisket, more than the bend test.  I find it hard to determine "bendabillity" in cryovac packaging.

I have read that some folks go by the bend test, and I've heard others discount it.  In full disclosure;  I have to say that I have not bought a lot of briskets.
