Thanks for adding me. My name is Phil and I'm from central Wisconsin. One of my favorite pastimes is smoking different types of meat. My favorite is ribs but from there I like to do pork butt, chicken, and beef brisket, and occasionally I smoke fish. I have been doing this for several years on a Big Chief smoker but recently just purchased a digital readout electric smoker. Wow... What a difference, it so much easier to control the temperature. I don't participate in any competitions but I joined this site to learn from all of the experts out there on how to do a better job at smoking.
