Hi Folks, I am John T and am new to the forum.  I have been a Weber gas guy for years and just purchased a Traeger Century Smoker from Costco a couple of days ago.  Just finished a 4# Brisket yesterday with hickory pellets.  Very good!  I paniced durning the stall as I had guests coming for dinner.  I upped the temp and before I knew it it was 206 degrees and a bit dry.  Can't wait to try pork tenderloin.

I really enjoy reading all the posts.

I'm also a weber gas guy who just ventured over to a weber charcoal smoker. Good luck with your Traeger! Patience is key. The stall is a good time to "marinate you liver"[emoji]128521[/emoji] I stole that from Spainglish.

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
