  3. Hi everyone. The Batman here from Florida. I just retired and decided I now have the time to do some smoken. I have wanted to do this for a long time and have been doing some on a Weber gas grill with a home made wood box and water pan using indirect heat. I just purchased a 30" MES 2 days ago and can't wait to get started. I have been on the computer researching recipes and advice and found your great forum. It is book marked now so I will be asking the pros on here for advice from time to time. Thanking you all in advance...Tim
  4. Oh I all most forgot, what position do I set the damper to, all the way open, 1/2 way open or closed?
