Just got ahold of a Welbilt commercial refrigerator and going to convert it. Goals for the build are to use electric heating source, have the ability to smoke foods at all ranges. Like to keep it simple and have it be a quality build. My schedule is pretty hectic and don't have alot of time so if someone can point me to some threads or links that cover alot of the standard do's and don't of building, that would be awesome.
I tested the foam insulation and not sure if I need to change it out. I lit it on fire, the flame was small and it burned for 3-4 seconds and went out. A question on sealing the door. I see everyone using the rope, I know people with commercial food smokers and they said their doors use rubber gaskets. Is it possible to use or get this type of gasket or is that not a good idea.
