Hello everyone, my name is Jesse.  I live in central Missouri, about an hour outside of St. Louis.  I am fairly new to smoking and BBQ and always have a ton of questions so I figured what better way to learn that getting intel from mass amounts of people who have been doing this far longer than I have.  I have started my hobby of cooking meat in a way that I have taken some flak from others.  I use a Materbuilt electric smoker and a generic gas grill.  My family members have been on me because I don't use charcoal grill and a tradition smoker, but my thoughts are start small and gradually move up in the world.

I decided to get into smoking meats because my wife insulted me by telling me that someone else's turkey was the best she had ever eaten.  This cut me to the bone because I have cooked so many turkeys in the past and always received excellent reviews, but I had never smoked one.  This had to change, I couldn't let my wife like someone else's meat more that mine!  So far to date I have smoked about a dozen chickens, a handful of pork loins, a pork butt, a turkey, and big brisket!  I currently have a few ideas for new things like smoked salmon and I am actually doing a duck today!  I have never even tried duck before so I hope it is tasty.
