M name is Brian and my wife got me a smoker/ grill for Christmas and I'm wanting to get into smoking... What do you all believe is the best meat to start of with

What type of smoker did you get?

Pork Picnic/Butt/Shoulder is all pretty forgiving. My first smoke, I found some cheap ribs and did that.

Welcome from up the road, Brian. This is a great site with lots of really good folks who are always eager to share their ideas and tips. All you have to do is ask. The pork cuts are very forgiving and produce a good cook, but the chicken is also very user friendly and inexpensive at the same time. My suggestion would be to spatchcock a chicken. Go to the search bar above and look up "smoking a spatchcocked chicken". It's easy to do, fun to do and will result in a really good chicken.
