Hi Yall, 

I just bought  a look alike Hark gas smoker, I think it is a cheap copy, I have used it a couple of times and it seams okay, I have cooked some pork ribs and turkey legs and got pretty good results,  hope to get better with practice and help from others.

I live in Australia and I don't know anyone who owns a smoker or has smoked meat so this web sight is great for getting good information and recipes,

I live in Australia and am keen to make Kangaroo jerky I can buy kangaroo meat from the local supermarket, so dose anyone have any ideas where to start kangaroo is a dark rich lean meat.

I have made South African style beef  Biltong a long time ago, I soaked it over night in a wet mix then hung to air dry it took a couple of 3 to 4 days depending on the weather and a bit hit and miss .

Welcome to the forum, you will find a wealth of information on this site and a helpful group of smoke addicts to get you going in the right direction.  I can't say about kangaroo jerky, I'll let someone else tackle that.

First off welcome to SMF there Ebby. You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.

Thanks Curt, Al, Craig, Mark, and JJ for the welcome encouragement and information,

I will be spending time looking around the SMF site, had a look at the e-course and found Moikel's posts,

I will let you all know how I go with the Roo jerky I think I will start with a dry rub set the smoker at app. 65 o for about 4 hrs???.

It is 511 AM here in Queensland  I am sitting here in a t shirt and boxers with all the doors and windows open and will be in the pool this avo.....
